講演題目 Interfacial rheology and reflectivity measurements: Protein adsorption layer, capsule formation, foam and emulsion stability, and biofilms

講演内容 :

The mechanical and structural properties of mobile fluid-fluid interfaces have a significant effect on the properties of multiphase soft matter systems. Interfacial rheology is introduced as a tool to study the deformation behavior of adsorption layers of proteins, small molecular weight surfactants, and particles. In particular, techniques and devices to apply shear and dilatational deformation to air-water and oil-water interfaces will be discussed. To capture the link between interfacial morphology and the resulting rheological properties of the adsorption layer also neutron reflectivity is briefly introduced. In a second part, the interfacial rheologicial response function of plant protein-polysaccharide complexes and food proteins. For the latter case, we suggest that protein stabilized emulsion drops can be considered as mechanical stable capsules with complex layer structure and deformation behavior. Using this knowledge, it becomes possible to tailor emulsions towards controlled digestion in the human body, thereby enhancing satiety and, thus, controlling food intake. As final example, the formation of biofilms at both air-water and oil-water interfaces will be discussed as outreach of interfacial rheological methods.
